Green olives, with the most famous being those from Amfissa and Halkidiki, are cultivated in various parts of Greece. They are harvested before they are fully ripe.
Green olives are the most common that we will find commercially processed. Their flavour is stronger than that of the other olives and their nutritional value is rich in healthy fatty acids, minerals and nutrients.
